“From the very beginning, our idea was to produce an organic gin. During a hike in the high mountains of the Stelvio National Park, we started asking ourselves why we were drinking gin from other regions and why there was no local gin from our area. More importantly, we wondered whether we had the capacity to produce it ourselves and how customers would respond to the product. Today, we are simply delighted to have achieved our goal and to be able to present our Organic Stelvio Gin,” says Niki Wallnöfer proudly.
At an altitude of 1,500 metres and surrounded by breathtaking alpine scenery, the distillery enjoys a truly spectacular setting. The location itself is reflected in the character and authenticity of the product.
But how is gin actually made? “Juniper berries must be the main ingredient; beyond that, you are free to create your own distinctive blend. As certified organic herb producers, we consciously chose to craft an organic gin using traditional methods. We named it Stelvio Gin because we use only local botanicals – herbs, fruits and other ingredients that thrive along the Stelvio Pass Road between Prad and the summit. Our promise is simple: certified organic production, the use of spring water from our own mountain source, and a handcrafted product made in small batches.”
With its commitment to regional ingredients, traditional craftsmanship and certified organic production, Stelvio Gin embodies the unique character of its alpine homeland while promoting sustainable local value creation.
“It is inspiring to see that there are people willing to place less emphasis on profit and instead support pioneering organic initiatives,” concludes Niki Wallnöfer.

The funded project
“With the support of Ethical Banking financing, provided through the partner bank in Sand in Taufers, we were able to create the facilities needed to carry out our own distillation process. The loan also helped cover costs related to planning, marketing and promotional activities, and enabled us to purchase the distillation equipment itself.”“It is inspiring to see that there are people willing to place less emphasis on profit and instead support pioneering organic initiatives,” concludes Niki Wallnöfer.
“It is wonderful to see that there are people willing to forgo higher returns in order to support pioneering organic initiatives. That is something I truly value.”
